This play on a traditional meat loaf quickly became a favorite in our house. In this recipe, quinoa (a gluten-free grain) takes the place of breadcrumbs to bind the ingredients together and lock in moisture. Fresh vegetables add natural flavor and a satisfying texture to each bite of this dish. For easy weekday meals, combine the ingredients ahead of time and store the meat loaf mixture in an airtight container in the freezer for up to 1 month. Then you can just defrost and cook on a busy night.

Serves: 6 I Serving size: 4 ounces meatloaf I Prep time: 10 minutes I Cooking time: 25-30 minutes

  • 1 large egg
  • 1/4 cup red bell pepper, seeded and chopped
  • 1 small shallot, peeled
  • 1 clove garlic, peeled
  • 2-inch piece carrot, peeled and shredded
  • 1 tablespoon canola oil
  • 1/2 cup cooked quinoa
  • 1-1/2 pounds ground turkey breast
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  1. Preheat the oven to 375 F. Line a rimmed baking sheet with parchment paper.
  2. In a blender of food processor, combine the egg, bell pepper, shallot, garlic, carrot, and oil; puree until smooth.
  3. Transfer the pureed vegetables mixture to a large bowl and add the cooked quinoa and ground turkey. Season with salt and pepper and mix well to combine.
  4. On the prepared baking sheet, form the meat mixture into a loaf about 4 inches wide and 1-2 inches high. Bake the meatloaf, uncovered, for 25 to 30 minutes, or until cooked through. Serve hot.
