Many people tell me that they are allergic to or can’t have eggs. This breakfast-style sandwich is perfect for them. Especially great for taking on the run, it be assembled the night before so it’s ready for a quick pass beneath the broiler before you dash out the door.

Makes 2 servings

  • 4 slices rye bread
  • 2 tablespoons Dijon mustard
  • 1/4 pound sliced turkey pastrami
  • 1/4 cup shredded Swiss cheese (about 1 ounce)
  • 1 small tomato, sliced

Preheat broiler or toaster oven. Line a baking sheet with foil. Place bread on the sheet. Spread mustard on the bread. Place turkey pastrami on 2 slices. Place Swiss cheese over turkey pastrami. Place under broiler for 1 minute, or until cheese melts. Place tomato slices over cheese and close sandwich with other 2 slices.

Per serving: 305 calories (20 percent from fat), 6.8 g fat (3.0 g saturated, 2.3 g monounsaturated), 48 mg cholesterol, 24.6 g protein, 35.7 g carbohydrates, 5.4 g fiber, 658 mg sodium
