Many people tell me that they are allergic to or can’t have eggs. This breakfast-style sandwich is perfect for them. Especially great for taking on the run, it be assembled the night before so it’s ready for a quick pass beneath the broiler before you dash out the door.
Makes 2 servings
- 4 slices rye bread
- 2 tablespoons Dijon mustard
- 1/4 pound sliced turkey pastrami
- 1/4 cup shredded Swiss cheese (about 1 ounce)
