  • 1 piece of fresh ginger, about 3 inches in length
  • 2 cups water
  • The zest of 1/2 lemon, and the juice
  • 1/3 cup honey
  • Sparkling carbonated water or club soda
  1. Grate ginger and lemon. Add to saucepan with 2 cups water. Bring to boil.
  2. Reduce heat and simmer for 5 minutes.
  3. Remove from heat and let steep for 20 minutes.
  4. Strain mixture to remove ginger and lemon. Squeeze lemon and remove seeds. Add lemon juice to mixture. Stir in honey.
  5. Refrigerate until completely chilled.
  6. Mix 1/2 cup ginger solution with 1/2 cup sparkling water.
