Makes four 1-cup servings

  • 1 egg
  • 1-1/2 cups skim milk
  • 2 tablespoons sugar or low-calorie sweetener
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla
  • 2 cups cooked rice (brown or white)
  • 1/4 cup raisins
  1. In a large bowl, beat the egg, milk, sugar or sweetener, cinnamon and vanilla. Use a spoon or whisk.
  2. Stir in rice and raisins.
  3. Pour into lightly greased baking dish.
  4. Bake at 350 F (180 C) for 45 minutes, or until the center is set.
