Try this speedy side dish with steak and sun-dried tomatoes and your favourite green vegetable.

Serves 6, 1/2 cup per serving II Preparation time: 10 minutes II Cooking time: 18 minutes

  • Cooking spray
  • 8 ounces presliced button mushrooms, (about 2-1/2 cups)
  • 6 to 8 medium green onions, sliced
  • 1 teaspoon bottled garlic or 2 medium garlic cloves, minced
  • 1-1/4 cups water
  • 1 teaspoon very low sodium beef bouillon granules
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried thyme, crumbled
  • 1-1/2 cups uncooked instant brown rice
  • 1-1/2 cups snipped fresh parsley (optional)
  1. Lightly spray a medium saucepan with cooking spray. Cook the mushrooms, green onions, and garlic over medium-high heat for 5 minutes, or until the mushrooms are soft, stirring occasionally.
  2. Stir in the water, bouillon granules, salt, thyme. Increas the heat to high and bring to a boil. Stir in the rice. Return to a boil. Reduce the heat to simmer, covered, for 10 minutes, or until the rice is tender. Stir in the parsley.
