Small green pepper (about 2/3 cup), diced
1 plum tomato, seeds removed, diced
1/2 cup cooked ham, diced
1 cup fresh baby spinach, stems removed
5 omega-3 eggs
1/4 cup milk
3 tablespoons canola oil
Pinch of salt
2 tablespoons dried chives or parsley flakes
1) Prepare the ingredients in advance. Slice the green pepper, tomato, ham, and keep separate. Slice the tomato in half. Scoop out the seeds with a tablespoon. Remove the stems from the spinach. Beat the eggs and milk. Keep refrigerated until needed.
2) Cook the green pepper in oil for about 10 minutes, or until tender-crisp. Add the tomato, ham and spinach. Cook for another 3 or 4 minutes.
3) Add the egg/milk mixture. Sprinkle with salt. Whisk the egg until all of the liquid has been absorbed. Sprinkle with chives or parsley.
